Here is a fantastic recipe I came up with the other night. I always love cooking with a pork tenderloin because they are so versatile and easy to work with. I have been looking for some inspiration to use the Tropical Traditions Coconut Oil I got a couple of weeks ago. I've never used coconut oil in cooking before so this was a new experience. I was kind of going on intuition.
I'll tell you right now that we like our food very flavorful so if you like a milder flavor you might want to take that into consideration and modify the recipe to suit your own taste.
